Your part
- Talk to your health unit early. Many will review the layout before the trailer is built, and we provide the layout drawing for it.
- Notify your local public health unit before you open. Each one has its own form and lead time, and Southwestern Public Health, for example, asks for at least 14 days' notice.
- Have at least one certified food handler on board whenever you're open. If you only sell low-risk food, ask your health unit whether this applies to you.
